The spelling of the name has changed over the centuries.
Some variants are.
Cols, Cools, Kools, de Cool, Coels, Colls, Couls, Coolsen

They are patronymics derived from the call sign Cool(e)/Cool(e) by the baptismal name Nicholas (Nicolasius) with a strong -s noun (from "Cools son").

Occupational name for the grower or seller of rapeseed.
