he was therefore born around 1751.

Jean Maurel listed above 20th October 1782 is the same Jean Maurel married to Catherine Pebeyre correct?

In the meantime, please see the death certificate of Francois Maurel received today from the Mairie of Reims.
there are few errors , due to the fact that the writer didn't know the exact spelling of names.
He died in the 53 rue Simon (if you look at google street, you'll see that all buildings are new).

on 4th June 1792, birth of François Maurel, son of François Maurel and Marie Vergne
the godfather is his elder brother François Maurel and can sign.

It is deducted from the 2nd wedding of her daughter Jeanne Maurel with Pierre Surchamp in Turenne (Corrèze) on the 20th November 1816. Jeanne Maurel is said widow of Guillaume Mournal for more than a year. Her parents François Maurel and Marie Vergne are said already deceased.
When we have few information, one has to look for the life of siblings
Jeanne Maurel is said widow of Guillaume Mournal for more than a year.
Indeed Guillaume Mournat is deceased on the 30th March 1815 in Turenne (Corrèze) act 12. (I didn't copy the archives as it gives no more information)

latest new : I found the first wedding in June 1809 in Turenne. Both parents of Françoise Maurel are said deceased
