Yes I have found these census records as well and I am still trying to make sense of them. I am unable to find any information on Frank/Franz or Barbara from Germany. The two possibilities that you listed appear to have died in infancy shortly after their baptisms (Carl Franz and Franz Josef). I was...

Hi, On the birth year, his grave stone says 1853 but sometimes in the New York State or US census his birth year is 1855 (sometimes it is 1853). One census has him being born in January. Not sure of the date. He and Barbara had a daughter in Germany in 1879, Louise/Louisa. She emmigrated with them. ...

Hi, yes that is correct although I have been unable to find any records about Barbara's death.

Frank/Franz remarried Amelia Ringeisen (no record of the marriage) and they had a son in June of 1893 (Frank J Schreiber). I have been able to find a baptism record for Frank J.
